Shrooms, Greens, and Beans!!!

So, I made a pot of soup a few days ago. And, I do believe it was pretty healthy,..and at the same time, delicious!! I love soup,….its cozy and comforting, making you feel all warm and snuggly inside and usually very simple to make.

I found this recipe in my Everyday Food Magazine. Yes, yes,…thanks Re for telling me about this magazine…he he he.

It’s called “Broccoli Rabe and White Bean Soup”. Yeah, I know,…really unique, fun, and interesting recipe name…maybe we should think of a more fun recipe title!

Shrooms and Greens,…. Green Soup Delight!, ooooh,….Shrooms, Greens, and Beans! I think I like that one the best!!

Broccoli Rabe and White Bean Soup (or Shrooms, Greens, and Beans,…he he he)
(Everyday Food)

Serves 6
prep 30 min
total 50 min

2 tbsp olive oil
2 medium onions, chopped
4 garlic cloves, minced
coarse salt and ground pepper
8 oz cremini mushrooms, trimmed and thinly sliced
1 bunch broccoli rabe (about 1 lb) trimmed and coarsely chopped
2 cans (14.5 oz ea) reduced sodium chicken broth
2 cans (15 oz ea) cannellini beans (white beans), rinsed and drained
1/4 cup chopped fresh parsley

1. In a dutch oven or pot, heat oil over medium. Add onions and garlic, season with salt and pepper. Cook, stirring frequently until onions have softened, 8-10 minutes. Add mushrooms; cook, stirring occasionally, until mushrooms begin to release their liquid, 2-3 minutes.

2. Add broth and 2 cups water; season with salt and pepper. Bring to boil and reduce heat to medium low. Cook stirring occasionally, until broccoli rabe is tender, 10-15 minutes. Add beans and parsely; simmer until warmed through, about 5 minutes.

(I added a TON of pepper and also threw in some garlic powder)

If you haven’t ever heard of Broccoli Rabe, which also goes by the names Rapini or Rabe, it looks very similar in appearance to broccoli, but is instead from the turnip family. I think it has a taste between broccoli, spinach, and asparagus…but, you can decide for yourself and and read about Broccoli Rabe here.

So enjoy some soup today, be cozy,…. get in your pajamas, cuddle up on the sofa, watch the Sound of Music, and eat some Shrooms, Greens, and Beans soup!!

Oh and serve it with some fresh warm bread and freshly grated Parmesan cheese on top. It’s really good that way!

And, if you don’t eat it right away, don’t worry! It’s even better the next day when all the flavor has marinated into the veggies!
