Coronado

My friend, Kyle, took this pic with my camera. He doesn’t know I’m putting this picture up, and it may be silly, since it’s my blog and usually my pictures, but it’s a pretty stinking, cool picture. And, hey!, at least I’m not claiming its mine.

This was a shot he took while a group of us were at a friends wedding on Coronado Island. It’s the other side of the island, not where the Hotel Del Coronado is, but still completely and utterly gorgeous; as you can see in this beautiful picture.

I love it. The grass reminds me of a Monet painting. Beautiful.

Tiramisu!

We hosted a church group at our house the other night and I made a very large tray of Pioneer Woman’s tiramisu. I have made it a few times before and every single time it is DELICIOUS!!

Yes, it takes some time to make, but it is definitely worth the time once you sink your teeth into that first bite.

Oh my,…is it ever rich, but glorious, wonderful, amazing.

You should try it out, you won’t be sad you did!!

Stuffed Peppers

These pictures are a few weeks old, but I thought I’d post them. After flipping though my photos and spotting them, I remembered how delicious these were and I had to share them with you!!

Stuffed green peppers with mushrooms, cherry tomatoes (from our garden!), onion, garlic, feta, gruyere cheese, finely diced breadcrumbs from a leftover loaf of olive bread, and assorted seasonings.

J and I mixed them up, while cooking one of our first dinners together in our new place. After traveling so much and on top of moving, we hadn’t eaten a home cooked meal in weeks. It was wonderful to be settled into our new place and to eat fresh, warm, homey food once again!

We didn’t follow a recipe for these delectable bites,… just kind of made it up as we went. While we were preparing the mixture, I threw the halved and seeded peppers in the oven at 400 degrees for about 6 or so minutes (honestly, I can’t remember exactly how long it took, but basically until they were just tender a bit,..not too tender, since we had to stuff them and put them back in the oven for just a bit to get everything heated though).

While the peppers baked in the oven, I sauteed onions, garlic, cherry tomatoes, and mushrooms with a bit of olive oil. After they were cooked though, I transferred them to a bowl and added in some shredded gruyere cheese, feta cheese, diced olive loaf breadcrumbs, and whatever random seasonings I felt like throwing in.

We then stuffed the, now cooked to just tender, peppers with the mixture and threw them back in the oven for about 8 more minutes or until just heated though.

They were delicious! You should try them out…I highly recommend it. YUM!

Cupcakes!

If you can’t eat the cupcakes, draw them!

I finished these invitations a few weeks ago for a really sweet client. They were for her one year old’s birthday and I loved making them!!

She requested cupcakes, circles, polka dots, and the colors pink, black, and yellow as her theme.

I came up with a few styles,…

But, she ended up deciding on this one. (Sorry for the ghetto-blurry-ness… I need to learn how to blur out in Photoshop more neatly.)

She requested a bit of sparkle, so I hand painted some fine glitter onto each cupcake.

These invites were so fun and so cute to make!

And I loved adding the cupcake on the back of the envelope flap for the finishing touch!

Snap, Crackle, and Pop!

Sometimes it’s nice to just get back down to the basics. I like to cook, but I’m not going to say I’m a food connoisseur. Nor, will I say I’m ashamed to make cereal box recipes. No, I am not.

So,… SNAP!, CRACKLE!, and POP!

Remember these?!

The other day, my younger brother who was visiting us, accompanied me to Costco. I believe he began to think I was just his sugar mama and J, his sugar papa, because his 20 year old self, just began throwing whatever he chose into our shopping cart. Not a big deal normally, but at Costco it is. J and I don’t really drink soda much, so when S decided he wanted 32 cans of Coke, I told him he’d have to drink all 32 cans in the next 5 days before he left to return to the East Coast. He promised he would. But, alas, he left last night and there are probably 20 cans left. Anyone want any Coke?

But, back to the snap, crackle, and pop!

When I returned from getting the 3 pack of Crest toothpaste in aisle 10, I found that little S has sneakily put a box of Rice Krispie Treats, the size of Antarctica (slight exaggeration), in our cart. I realized it had gone too far. Yes, S is the youngest in our family of 5, maybe he did miss out on some things being the youngest and getting forgotten, but I wasn’t about to let him have the 52 pack of Rice Krispie Treats. So, I kindly asked him to put them back and told him we’d go to Vons and get a box of cereal and marshmallows and I’d make him homemade ones.

So, that is what I did.

And you know what? They were delicious,…that butter, marshmallow, and rice krispie combination.

I truly felt like a kid again… in the 80′s. It was great.

Try out the recipe, if you like, it was simple and easy and takes you waaaaaay back!

Kellogg’s Rice Krispie Treats

(taken from the site of the Rice Krispies Cereal Box)

Prep Time- 10 minutes

Total Time- 10 minutes

12 Servings

Ingredients

3 tablespoons of margarine or butter

(1) 10 oz. package of large marshmallows or 4 cups of mini marshmallows

6 cups of Rice Crispies

Directions

-Melt Butter in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.

-Add Rice Krispies to mixture and stir until well coated.

-Using buttered spatula or waxed paper, press mixture evenly into 13 x 9 x 2-inch pan coated with cooking spray. Cut into 2-inch squares when cool. Best if served the same day.
