Lemon Cupcakes with Lemon Cream Cheese Frosting and Candied Lemon Rinds! Oh my!

I know, I know,….are you already freaking out?! Cause I sure was!

Oh my,… lemony goodness! A couple of weeks ago I made a very large batch of these for a friends wedding. Her request was something light and refreshing. Lemon was the way to go, we decided, and I dove right into making these!

I found this recipe for lemon cream cheese frosting. It was delicious!

But the freaking out point were these glorious lemon candied rinds (I’m sorry I don’t have a better picture, I was too busy candy-ing to snap a good one!). Have you EVER candied the rind from a fruit?! I had not and for some reason, just assumed it was something that would be complicated, tedious, take WAY too much time, cause me to go into a state of great frustration,… you get the picture.

But friends, oh friends!!! They are NOT HARD AT ALL! Yes, you have to peel the rind, blanch them a few times, boil them in sugar water ’til they candy, and make sure they don’t stick together when you lay them out to cool… But, seriously! It was worth it! The amount of excitement I had from making these was a little ridiculous. Yes, J may have thought I was a tad too overjoyed by such a little thing, but let me tell you, he didn’t make fun when it was time to eat them.

They were delicious! The trick was using the lemon boxed cake mix for the cupcake part. Keep that simple and then you have energy to put into the DELICIOUS frosting and candied lemon rinds.

They were so, so fun! I LOVED making them. Who’s next?! Who’s getting married?! Who needs cupcakes for their wedding?! I’m ready to go. Think of all the options,….orange, grapefruit, lime! Mmmmm-mmmmm!

*Note: the recipe I used called for 1 large lemon to 2 1/2 cups of sugar. You DO NOT have to only use one lemon! I used probably at least 5 lemons! *
