Pumpkin patch cupcakes!
I’m not sure if these are a common thing,…but I specifically remember, when I was about 9 or 10 years old, one of my mom’s friends bringing over a tray of these during the fall season. They must have made an impact on me, because after all these years, I still remember them and for the past few years have made them each fall season. I thought they were so fun, cute, and unique…definitely something a child would love to eat (that is, if they like coconut!).

Ruby and I made them a week or so ago. We had fun and kept it simple. The ingredients: a box of cake mix, a container of icing, 1/2 of a bag of coconut flakes, green food coloring, and candy pumpkins.

Bake your cupcakes. While they are cooling, mix a few drops of green dye in with the coconut flakes. Add more coloring until you’ve reached the consistency you like to make the “grass”. Throw your icing on, then dip the top of the cupcake in the coconut and top off the cake with a candy pumpkin.
Such a sweet little treat!
